Do you love blueberry muffins? Cobbler? Either way, you will love these!
Ingredients for Two:
Filling:
1 c. frozen blueberries
2 T. sugar
1/2 T. lemon juice
1/2 tsp. cornstarch
Topping:
1/4 c. flour
1/4 c. sugar
1/2 tsp. baking powder
1/4 c. milk (2% is best)
2 T. melted butter
Preheat oven to 350.
Mix blueberries with sugar, lemon juice, and cornstarch. Melt in microwave for just about 1 minute (or until ice chunks are gone).
Spoon the blueberry mixture (without excess juice) into two ramekins (you don't have to spray or butter the ramekins).
Wisk together flour, sugar, and baking powder. Stir in milk and melted butter until just combined.
Spoon topping over the blueberries.
Place ramekins on airbake pan (in case it spills over).
Bake for 28 minutes, until golden and bubbling.
Add whipped topping or ice cream if desired (I liked it without anything added).
It's so good! Enjoy!
