4½ - 5 c. Rice Chex
1 c. semisweet chocolate chips (nestle)
½ c. peanut butter (We prefer the creamy JIF brand)
¼ c. butter
1 tsp. vanilla
1½ c. powdered sugar
Clover's note: It's easier to have a 9x13 tinfoil pan (or two--one to mix and another to serve). You will also need two gallon size Ziploc bags for the powdered sugar dusting.

- Pour cereal into a tinfoil pan or a very large bowl. Set aside.
- In 1-quart microwavable bowl, melt butter (about a minute on high). While the melted butter is warm, stir in the peanut butter until smooth. Then stir in the chocolate chips in the warm butter/peanut butter mixture and stir until the chocolate chips are melted and smooth. Stir in vanilla. Taste to see if a little more peanut butter or chocolate is needed for the right balance.
- Pour mixture over cereal, stirring until evenly coated.
- Spoon chex into 2-gallon resealable food-storage plastic bag. Add powdered sugar. Seal bag; shake until well coated. (Clover's Note: I divide the chex into two gallon sized bags and split the powdered sugar between the two for even dusting.)
- Spread into tinfoil pan or on waxed paper to cool.
- Store in airtight container in refrigerator.
